- Cook the Loprofin Low Protein Rice according to the on-pack instructions and season the water with a teaspoon of salt, sugar, 2 tablespoons of wine vinegar, then leave to cool
- Finely dice the peppers and combine with the PKU cheese
- Place a spoonful of rice in the centre of the nori and spread evenly
- Spread the cheese and pepper mixture over the rice and layer with cucumber slices
- Create another layer with the pickled radish and/or ginger over the cucumbers
- Add another layer of lettuce leaves and a sliver of omelette (optional)
- Cover your layers with a spoonful of rice.
- Finish with a nori sheet and press down gently on the "sandwich" with a kitchen cloth
- Cut into bite-sized sushi pieces or fold into a hand roll
- Optional – for a version containing an egg substitute - whisk the egg substitute with soy sauce in 75 ml of water for 2-3 minutes and fry as a thin "omelette" in a little oil.
