Celery

Ingredients

Red peppers, seeded, halved 

3 large 

 

Olive oil 

2 tsp 

 

Onion, finely chopped 

1 small

 

Ground coriander 

½ tsp 

 

Ground cumin 

1 tsp 

 

Cooked Loprofin Rice

100 g

 

Garlic, crushed 

1 clove

 

Lemon, juice and finely grated zest 

½ 

 

Salt and pepper to taste 

 

Olive oil

Optional, for thinning the hummus & serving

Method

  1. Preheat the oven to 200 °C. 
  2. Drizzle the peppers with half the olive oil and bake in the oven for 20 minutes. 
  3. Meanwhile, heat the remaining olive oil in a small frying pan, add the onion and garlic and sauté over medium heat for 5 minutes until soft. 
  4. Add the coriander and cumin, followed by the lemon juice and zest. Let the mixture cool for 5 minutes. 
  5. In a blender, add the grilled peppers, fried onion, garlic and cooked Loprofin Rice. Blend to a smooth paste. 
  6. Add a few spoonfuls of water or extra olive oil to thin out the hummus if needed. 
  7. Season with salt and pepper. 
  8. Serve in a bowl and enjoy with carrot strips, cucumber or low-protein bread.
