- Preheat the oven to 200 °C.
- Drizzle the peppers with half the olive oil and bake in the oven for 20 minutes.
- Meanwhile, heat the remaining olive oil in a small frying pan, add the onion and garlic and sauté over medium heat for 5 minutes until soft.
- Add the coriander and cumin, followed by the lemon juice and zest. Let the mixture cool for 5 minutes.
- In a blender, add the grilled peppers, fried onion, garlic and cooked Loprofin Rice. Blend to a smooth paste.
- Add a few spoonfuls of water or extra olive oil to thin out the hummus if needed.
- Season with salt and pepper.
- Serve in a bowl and enjoy with carrot strips, cucumber or low-protein bread.
