Ingredients

Olive oil

1 tbsp


Red onion, chopped

Garlic, crushed

2 cloves


Carrot, cubed

Sticks of celery, finely sliced

Tomato puree

Tinned haricot beans, drained and rinsed

Chopped tomatoes

Vegetable stock

Cooked Loprofin Rice

50g


Small bunch of basil


Salt and pepper

Method

  1. Gently cook the onion, carrots and celery in the oil in a large saucepan for 20 minutes, until soft. Add a splash of water if the pan becomes dry.
  2. Add the garlic, tomato puree, herbs and courgettes and cook for 4-5 minutes on a medium heat until they brown a little.
  3. Pour in the tomatoes and stock and simmer for 20 minutes.
  4. Add the Loprofin Rice and beans and simmer for a further 15 minutes.
  5. Season to taste with salt and pepper.
  6. To serve, sprinkle with basil and drizzle with olive oil.
  7. Store leftovers in the fridge for up to 3 days or freeze for up to 6 months.
  8. 20 minutes, until soft. Add a splash of water if the pan becomes dry.
  9. 4-5 minutes on a medium heat until they brown a little.

 

Chef's tip:

This soup tastes even better the next day - we highly recommend batch cooking.
