- Preheat the oven to 180°C.
- In a jug, mix the pumpkin puree, Loprofin Sno-Pro, lemon juice and melted butter.
- In a bowl, add the Loprofin Mix, Loprofin Egg Replacer, salt, ground tumeric and bicarbonate of soda. Whisk to combine.
- Stir in the pumpkin mixture from the jug and stir to combine.
- Add in the olives, mushrooms, and half the cheese (don't overmix at this stage).
- Divide the mixture into the muffin tins and sprinkle over the rest of the cheese.
- Bake in the preheated oven for 10-15 minutes. The top should be golden when baked and will spring back when you press your finger on the top.
- Allow the muffins to cool in the tin for 15 minutes before transferring to a wire rack to cool.
Chef's tips
- This recipe uses pumpkin puree from a tin - make sure to select the cooked pumpkin version for the puree, not pie filling version (which has spices added)
- If you choose to use fresh pumpkin, chop the pumpkin into slices & steam until cooked, then mash. Allow to cool before use in the recipe.
- You can add 75g of grated courgette or carrot to this recipe.
- You can freeze muffins for up to 3 months in a sealed container.
- You can add other spices including ground paprika, cumin or chilli powder.
