Ingredients

Aubergine

2 medium

 

Lemon juice 

30ml

 

Olives, black without stone 

20 g

 

Coriander powder 

2 tsp

 

Olive oil 

5ml

 

Garlic, peeled

2 cloves

 

Cumin powder 

½ tsp

 

Salt, Pepper 



Finely chopped fresh parsley 

1 tsp

 

Olives

Optional, for serving

Method

  1. Preheat the oven to 200°C. 
  2. Wash the aubergines and cut them in half. Coat the halves with olive oil, and sprinkle with salt and cumin; and then roast in the oven for about 30 minutes along with the garlic cloves (remove in their skins). The skin of the aubergine will take on a dark color.  
  3. Scrape the flesh out of the aubergines. Drain in a colander and put it in a blender.  
  4. Puree the aubergine flesh, soft garlic, lemon juice and spices in a blender. If you prefer a dip with some pieces, you can also choose to crush with a fork.
  5. Season with salt and pepper.  
  6. Serve in a small bowl with a drizzle of olive oil, finely chopped parsley and olives.  

 

Chef's tip

Can be eaten with Loprofin Crackers or a delicious low protein naan bread.
