Ingredients

Pineapple 

1 fresh

 

Red chilli

1 fresh

 

Orange juice 

50 ml

 

Lime juice 

1 Tbsp

 

Olive oil 

2 Tbsp

 

Salt & lemon pepper 

 

Whole red peppercorns 

 

Fresh basil 

Method

  1. Peel the pineapple, cut it into quarters and remove the hard core. 
  2. Halve the pineapple pieces again lengthwise and cut them into strips. 
  3. Wash the chilli, remove the stem and seeds and cut into thin strips. 
  4. Cut the lime in half and squeeze out the juice. 
  5. In a bowl, combine the sliced pineapple and chilli. Drizzle with orange juice, lime juice, olive oil and herbs. Make sure everything is well mixed. 
  6. Cover the salad and let it steep in the fridge for 1 hour. 
  7. Mix again, season and serve garnished with red peppercorns and chopped basil.
