- Chop the pepper, mushrooms, carrot, grapes and spring onions into bite-sized pieces.
- In a bowl, add the apple juice and whisk in the olive oil, seasoning with salt and pepper for taste.
- Then add the chopped vegeatbles and the cooked Loprofin Rice to the bowl.
- Stir until everything is coated in the dressing, then add the apple chips.
- Serve straight away or leave in the fridge until needed.
