Ingredients

Loprofin Mix

150 g  

 

Butter

150 g  

 

Hard margarine  

40 g

 

Cold water 

 

 

For the filling :

 

Oil

1 tbsp

 

Vegetables of your choice (e.g. broccoli, mushrooms, leeks, peppers, onions, courgettes) 

200 g

 

White bechamel sauce (homemade or vegan ready-made — always check the ingredients when using ready-made ingredients) 

250 ml

Method

  1. To make the dough, place the Loprofin Mix in a large bowl, add the butter and margarine (cut into small pieces) and knead the mix until the texture resembles coarse breadcrumbs. 
  2. Stir in water a little at a time to make a soft, but not too sticky dough. 
  3. On a sheet of baking paper, knead the dough lightly for a few seconds until smooth. 
  4. Roll out the dough and cover a 20cm diameter, loose-bottom pie tin. 
  5. Preheat the oven to 200 °C. 
  6. To make the filling, heat the oil in a pan and cook the vegetables until soft. 
  7. Add the béchamel sauce to cover the vegetables and cook for 1-2 minutes (freeze any leftover sauce for later). 
  8. Add the mixture to the dough in the pie pan. 
  9. Place on a baking sheet and bake in a preheated oven for 20-25 minutes until firm to the touch. 
  10. Full of vegetables. Great for lunch or dinner!
