Ingredients

Loprofin Mix
300 g
 
Baking powder
2 tsp
 
Butter, fridge cold, cut into cubes
120 g
 
Loprofin Egg Replacer
2 tsp
 
Dried cranberries
80 g
 
Loprofin drink LQ
150 ml
 
Lemon juice
2 tsp
 
Low protein cheese, cut into small cubes
80 g
 
Pinch of salt and pepper

Method

  1. In a bowl, combine the Loprofin Mix, Loprofin Egg Repacer and baking powder.
  2. Add the cold butter and rub it with your fingers until it resembles breadcrumbs.
  3. Stir in the cranberries and low protein cheese.
  4. Add the lemon juice and Loprofin drink LQ* and stir with a butter knife until a soft dough is formed.
  5. Dust the work surface with some Loprofin Mix and place the dough on top. Press it out with your hands into a circle of 18 cm in diameter.
  6. Place the dough on a baking tray lined with baking paper and cut it into 8 pieces with a sharp knife.
  7. Bake at 170°C for 20-25 minutes, until the top is golden brown.
  8. Let the scones cool on the baking sheet.
 
 
Chef's tips
  • You can add any dried fruit to this recipe - mixed fruit, pineapple, apple and mango work well.
  • Serve with low protein cream cheese as a lunchbox snack.
  • Slice and toast for breakfast.
  • Can be frozen in an airtight container for up to 3 months.
