Ingredients

Loprofin Mix (extra for dusting and shaping the bread)

250g


Cold hard white fat cut into cubes

25g


Salt

1 tsp


Sugar

1 tsp


Loprofin Sno-Pro

200mls


Psyllium husk

10g 


Packet of yeast

7g


Bicarbonate of soda

2 tsp

Method

  1. Mix the psyllium husk with the Loprofin Sno-Pro and allow to thicken for 10 minutes.
  2. Rub the hard white fat into the Loprofin Mix so it looks like breadcrumbs.
  3. Add the sugar, salt, and yeast, and pour into the Loprofin Sno-Pro mixture. Mix until you have a soft dough. Cover and leave in a warm place until the dough doubles in size.
  4. Tip the dough onto a work surface dusted with a little Loprofin Mix.
  5. Divide the dough into 50g pieces.
  6. Flatten into 4-inch circles and cut out the center.
  7. Place on a baking sheet and cover. Leave in a warm place until the dough doubles in size.
  8. Half full a large saucepan with water and the bicarbonate of soda.
  9. Bring the water to a light simmer, now place in the bagels one at a time. Allow to simmer for 2 minutes per side.
  10. Remove with a slotted spoon and place on a lined baking sheet. Optional: Sprinkle with poppy seeds or sesame seeds.
  11. Bake in 170°C oven for 10-15 min until golden brown. If you tap the bottom, they should sound hollow when cooked.

 

Chef's tips

Whenever you are rolling / handling dough, always dust your work surface with Loprofin Mix to stop the dough from sticking to the roller and to your work surface.
