- Preparation: Weigh all ingredients before you start.
- Combine the Loprofin Mix*, salt and sugar in a bowl. Place the softened butter on the side of the bowl (do not mix yet).
- Dissolve the yeast in the lukewarm water and add the liquid all at once.
- Knead with the kneading hooks of an electric mixer for a few minutes.
- Once a dough-like consistency is achieved, add the cream and continue kneading until you have a firm (but not hard) dough ball.
- Sprinkle a surface with some Loprofin Mix* before placing the dough ball on top. Knead with your hands and cover with a damp tea towel. Let it rise for 1 hour (not in the fridge).
- Preheat the oven to 220°C.
- Knead the dough again, divide it into 9 equal pieces, and form oval-shaped balls.
- Roll each ball flat with a rolling pin into a rectangle. Add filling such as jam or raisins if desired.
- From a corner, roll the dough into a croissant shape and bend the ends inwards into a crescent moon.
- Place the croissants on a baking tray lined with baking paper and leave to rise for another 20 minutes.
- Brush with oil and bake for 15-20 minutes.
- Leave to cool on a wire rack. Enjoy!
