Ingredients

Loprofin Mix* 

450 g

 

Soft butter 

40 g

 

Salt 

1 pinch

 

Sugar 

10 g

 

Fresh yeast 

30 g

 

Lukewarm water 

175 ml

 

Cream (min. 30% fat) 

50 ml

 

For kneading and shaping 

 

Loprofin Mix* 

25 g

 

Oil for brushing

Method

  1. Preparation: Weigh all ingredients before you start. 
  2. Combine the Loprofin Mix*, salt and sugar in a bowl. Place the softened butter on the side of the bowl (do not mix yet). 
  3. Dissolve the yeast in the lukewarm water and add the liquid all at once. 
  4. Knead with the kneading hooks of an electric mixer for a few minutes. 
  5. Once a dough-like consistency is achieved, add the cream and continue kneading until you have a firm (but not hard) dough ball. 
  6. Sprinkle a surface with some Loprofin Mix* before placing the dough ball on top. Knead with your hands and cover with a damp tea towel. Let it rise for 1 hour (not in the fridge). 
  7. Preheat the oven to 220°C. 
  8. Knead the dough again, divide it into 9 equal pieces, and form oval-shaped balls. 
  9. Roll each ball flat with a rolling pin into a rectangle. Add filling such as jam or raisins if desired. 
  10. From a corner, roll the dough into a croissant shape and bend the ends inwards into a crescent moon. 
  11. Place the croissants on a baking tray lined with baking paper and leave to rise for another 20 minutes. 
  12. Brush with oil and bake for 15-20 minutes. 
  13. Leave to cool on a wire rack. Enjoy!
