- Cook the Loprofin Rice* in a large pan of boiling water.
- Cut the onion in half and then into thin slices. Put these together with the olive oil in a large frying pan over low to medium heat.
- Fry the onion for 5 minutes. Add 1/2 tsp salt if desired to prevent the onion from browning.
- Cut the aubergines into strips and add to the onion. Bake for another 5 minutes.
- Add the garlic puree, smoked paprika, and dried herbs. Cook for an additional 2 minutes.
- In a bowl, mix the Loprofin Mix* with the Loprofin drink LQ* until smooth. Then add the vegan cream.
- Pour the cream mixture into the aubergines and stir. Simmer until the sauce thickens.
- Drain the rice and serve with the stroganoff sauce.
Tips from the chef:
- Add mushrooms or peppers for extra flavor.
- You can freeze the stroganoff and reheat it.
- Stroganoff is traditionally served with noodles. Use Loprofin Spaghetti* for this.
