- Boil the potatoes with their skins until soft.
- Let the potatoes cool and remove the skin.
- Mash the potatoes with a potato ricer or sieve.
- Add the potato starch and some salt. Mix until smooth.
- Take 1/5 of the mixture aside and mix it with the turmeric.
- Roll small hazelnut-sized balls from this yellow mixture.
- Make larger balls (the size of an egg) from the rest of the dough. Make sure they are the same size as the yellow balls.
- Press a yellow ball into the center of each white ball and form an egg out of it.
- Boil the balls in salted boiling water for 1 minute. They are ready when they come to the surface.
- Finely chop the broccoli and green leeks.
- Fry the vegetables in oil for 2 minutes.
- Add the finely chopped garlic and fry for another 1 minute. Season with salt and pepper (nutmeg if desired).
- Transfer the vegetables to a plate and serve the "eggs" on top.
