Coconut

Ingredients

Roasted vegetables (parsnips, butternut squash, cauliflower)  

900 g

 

Onions

Coconut oil 

25 g

 

Chili flakes 

1 tsp 

 

Cumin 

1 tsp 

 

Ground coriander 

1 tsp 

 

Turmeric 

2 tsp 

 

Minced ginger 

2 tsp 

 

Tamarind paste 

2 tsp 

 

Coconut water 

1 l 

 

Vegetable stock cube

Pak Choi

200 g 

Method

  1. Melt coconut oil, sauté the sliced onions with salt for 15 minutes until soft.
  2. Add the spices and ginger, fry briefly.
  3. Mix coconut water, broth and tamarind. Add this to the pan and cook.
  4. Add roasted vegetables, bring back to a boil. 
  5. Cook white parts pak choi for 3 minutes.
  6. Add green leaves and let wilt.

  • Suitable for freezing 
  • Delicious with low-protein coconut rice  
  • Make soup by adding extra broth
