Ingredients

For the pizza base: 

 

Loprofin Mix 

250 g

 

Loprofin Sno-Pro

100 ml

 

Warm water 

125 ml

 

Pinch of salt 

 

Pinch of sugar 

 

Dried yeast 

4 g

 

Psyllium husk

1 tbsp 

 

Olive oil 

1 ½ tbsp 

 

 

For the topping

 

Extra virgin olive oil 

2 tbsp

 

Pinch of za'atar (or any other dried herbs) 

 

Clove of garlic, thinly sliced

Mushrooms, sliced 

80 g

 

Red onion, sliced

Sundried tomatoes

Handful of artichokes (from a jar) 

 

Handful of rocket leaves 

 

Dash of balsamic vinegar 

 

Crème fraîche

Method

  1. Add the warm water, Loprofin Sno-Pro, dried yeast, sugar and psyllium husk into a bowl. Stir well and allow to stand for 10 minutes until the mixture thickens.
  2. Add the olive oil, salt, Loprofin Mix and mix to form a dough. Knead the dough well for 3 minutes.
  3. Let the dough rise in a warm place for 30 minutes until it has doubled in size.
  4. Preheat the oven to 200°C.
  5. Lightly dust a work surface with flour. Roll out the dough thinly into the shape of a pizza.
  6. Place the dough on a baking sheet. Drizzle with olive oil and top with sundried herbs, garlic, mushrooms, red onion, sun-dried tomatoes and artichokes.
  7. Drizzle with a little more olive oil and season with salt and pepper.
  8. Bake the pizza in the preheated oven for 20-25 minutes, until the base is golden brown. 
  9. Serve with fresh rocket leaves, a drizzle of balsamic vinegar and some crème fraîche.
