- Boil Loprofin Rice for 7 - 9 minutes and then drain.
- Bring the green asparagus to a boil for 2 to 3 minutes so that they are al dente. Blanch the asparagus by placing them in cold (ice) water. This stops the cooking process and keeps the asparagus nice and green and crispy.
- Add olive oil to a pan and fry the finely chopped shallot for 5 minutes.
- To the pan, add the peas, dried mint and garlic.
- After frying the peas, add the Loprofin Rice and creme fraiche to the pan - mix it all together.
- Finish the dish with vegan Parmesan cheese and the green asparagus.
Chef's tip:
Finish the rice dish with lemon zest and fresh mint leaves.
