Ingredients

Pumpkin puree

150g


Loprofin Sno-Pro

200ml


Lemon juice

2 tsp


Butter, melted

110g


Loprofin Mix

250g


Loprofin Egg replacer

2 tsp


Ground tumeric

1 tsp


Bicarbonate of soda

1 tsp


Salt and pepper


Black olives

50g


Mushrooms, diced and fried

100g


Low protein cheese

Method

  1. Preheat the oven to 180°C.
  2. In a jug, mix the pumpkin puree, Loprofin Sno-Pro, lemon juice and melted butter.
  3. In a bowl, add the Loprofin Mix, Loprofin Egg Replacer, salt, ground tumeric and bicarbonate of soda.  Whisk to combine.
  4. Stir in the pumpkin mixture from the jug and stir to combine.
  5. Add in the olives, mushrooms, and half the cheese (don't overmix at this stage).
  6. Divide the mixture into the muffin tins and sprinkle over the rest of the cheese.
  7. Bake in the preheated oven for 10-15 minutes. The top should be golden when baked and will spring back when you press your finger on the top.
  8. Allow the muffins to cool in the tin for 15 minutes before transferring to a wire rack to cool.

 

Chef's tips

  • This recipe uses pumpkin puree from a tin - make sure to select the cooked pumpkin version for the puree, not pie filling version (which has spices added)
  • If you choose to use fresh pumpkin, chop the pumpkin into slices & steam until cooked, then mash.  Allow to cool before use in the recipe.
  • You can add 75g of grated courgette or carrot to this recipe.
  • You can freeze muffins for up to 3 months in a sealed container.
  • You can add other spices including ground paprika, cumin or chilli powder.
