- To make the dough, place the Loprofin Mix* in a large bowl, add the butter and margarine (cut into small pieces) and knead the mix until the texture resembles coarse breadcrumbs.
- Stir in water a little at a time to make a soft, but not too sticky dough.
- On a sheet of baking paper, knead the dough lightly for a few seconds until smooth.
- Roll out the dough and cover a 20cm diameter, loose-bottom pie tin.
- Preheat the oven to 200 °C.
- To make the filling, heat the oil in a pan and cook the vegetables until soft.
- Add the béchamel sauce to cover the vegetables and cook for 1-2 minutes (freeze any leftover sauce for later).
- Add the mixture to the dough in the pie pan.
- Place on a baking sheet and bake in a preheated oven for 20-25 minutes until firm to the touch.
- Full of vegetables. Great for lunch or dinner!
