- Cut the aubergine into slices and sprinkle with salt. Let this sit for 10 minutes to remove excess moisture.
- Pat the slices dry with kitchen paper as soon as small droplets of moisture are visible.
- Heat the olive oil in a pan and fry the aubergine slices until golden brown.
- Let the fried aubergine slices cool and then put them in a blender.
- Add the tomato paste and butter / margarine and blend until smooth.
- Stir in the minced garlic and herbs. Taste and season with additional salt, pepper, or chilli powder as needed.
