- Preheat the oven to 150°C.
- Place the butter and sugar in a mixing bowl and beat well.
- Stir in Loprofin Mix*, syrup, ginger, and baking powder to form a dough (add a small amount of water if needed).
- Knead the dough on the work surface for about 30 sec and then roll it out until it is 1/2 cm thick and use a cutter to cut out the gingerbread men. Lightly re-roll and knead leftovers to use the remaining dough.
- TIP: Kneading and rolling out a dough is always done on a lightly floured work surface, so that the dough does not stick to it. Use a little Loprofin Mix for this*.
- Place the cookies on a baking sheet and bake for 10–15 minutes until lightly golden.
- Carefully remove the cookies from the baking sheet and allow them to cool completely on a wire rack.
Chef's tips:
- Decorate the cookies with royal icing. Look for inspiration on e.g. Pinterest.
- You can use this cookie recipe for gingerbread houses and decorate with royal icing or low-protein candies. A fun activity during Christmas time to do with the children.
- You can freeze the cookie dough for up to 3 months after preparation.
