Ingredients

Shortbread:

Loprofin Mix

225g

Butter

125g

Caster sugar

50g


Caramel:

Butter

125g

Light brown sugar

75g

Golden syrup

50g

Vegan cream

125g


Topping:

Low protein chocolate

Method

  1. Preheat oven to 170°C.
  2. Mix butter and sugar until fluffy, add Loprofin Mix to form dough.
  3. Spread into tin and bake for 20 minutes, then cool.
  4. For caramel, melt butter, sugar, syrup, boil for 5 minutes.
  5. Add vegan cream, boil again for 5 minutes.
  6. Pour caramel over shortbread and cool.
  7. Melt chocolate and pour over caramel, allow to set.
  8. Cut into 9 squares and store in airtight container.
