Jicama Alphabet Fries

Looking to add a little variety to your diet? Try substituting potato with jicama as a lower in protein alternative to fries. Give the kids a little surprise with alphabet fries!

Ingredients

  • 1 medium jicama (660 g or ~1½ lb), peeled, cut into ½-inch thick slices, then cut into letter shapes with alphabet cookie cutters (or cut into matchsticks for a more traditional look)
  • 2 Tbsp olive oil
  • ½ tsp coarse salt
  • ½ tsp garlic powder
  • ½ tsp paprika, for color
  • ¼ tsp ground black pepper

Directions
 

  • Preheat oven to 400°F.
  • Line a cookie/baking sheet with foil.
  • Bring about 1 quart (950 mL) of water to a boil in a medium pot.
  • Add jicama to the water and cook for 8 minutes until jicama is slightly less crunchy.
    Alternatively, place the jicama in a microwave-safe bowl with 2 tbsp of water. Cover and microwave for 15 minutes, stopping once to stir gently.
  • Drain the jicama using a colander.
  • In a large bowl, toss together the jicama, olive oil and seasonings.
  • Arrange jicama on the foil-lined baking sheet.
  • Bake for 45 minutes, until golden brown.
  • Serve immediately.
