Jicama Alphabet Fries
Looking to add a little variety to your diet? Try substituting potato with jicama as a lower in protein alternative to fries. Give the kids a little surprise with alphabet fries!

Ingredients
- 1 medium jicama (660 g or ~1½ lb), peeled, cut into ½-inch thick slices, then cut into letter shapes with alphabet cookie cutters (or cut into matchsticks for a more traditional look)
- 2 Tbsp olive oil
- ½ tsp coarse salt
- ½ tsp garlic powder
- ½ tsp paprika, for color
- ¼ tsp ground black pepper
Directions
- Preheat oven to 400°F.
- Line a cookie/baking sheet with foil.
- Bring about 1 quart (950 mL) of water to a boil in a medium pot.
- Add jicama to the water and cook for 8 minutes until jicama is slightly less crunchy.Alternatively, place the jicama in a microwave-safe bowl with 2 tbsp of water. Cover and microwave for 15 minutes, stopping once to stir gently.
- Drain the jicama using a colander.
- In a large bowl, toss together the jicama, olive oil and seasonings.
- Arrange jicama on the foil-lined baking sheet.
- Bake for 45 minutes, until golden brown.
- Serve immediately.
