- Melt coconut oil, sauté the sliced onions with salt for 15 minutes until soft.
- Add the spices and ginger, fry briefly.
- Mix coconut water, broth and tamarind. Add this to the pan and cook.
- Add roasted vegetables, bring back to a boil.
- Cook white parts pak choi for 3 minutes.
- Add green leaves and let wilt.
