Cauliflower & Zucchini Topping

One great recipe with three great ways to enjoy it. Serve over low protein rice, over greens or as a taco. Great for people with PKU or anyone following a diet low in protein.

  • 1 Tbsp olive oil
  • 1 Tbsp butter
  • 6 cauliflower florets (top sections) (78 g), finely chopped
  • ½ medium zucchini (98 g), finely chopped
  • 1 packet (13.6 g) taco seasoning


  • In a large frying pan, heat oil and butter on medium heat.
  • Add cauliflower and zucchini to pan.
  • Cook for 8 minutes, stirring frequently.
  • Mix in taco seasoning and cook for an additional 2 minutes.


Serve over low protein pasta, low protein rice, or inside corn taco shells.
