Simple Apple Salad

An easy and delicious salad that you can enjoy all year round. Honeycrisp apples give this salad a lovely, sweet taste, but any type of apple can be used.

Ingredients

  • 2 Tbsp olive oil, extra virgin
  • 2 Tbsp lemon juice, freshly squeezed
  • ¼ tsp kosher salt
  • ¼ tsp black pepper
  • 2 cups (250 g) Honeycrisp apple, diced
  • 2 cups (200 g) celery, sliced
  • cup (40 g) red onion, sliced
  • ½ cup (30 g) fresh parsley, loosely packed

Directions
 

  • In a large bowl, whisk together the oil, lemon juice, salt and pepper.
  • Add the remaining ingredients and toss to coat.
