Savory Watermelon Salad

Ingredients
3
cups (455 g)
seedless watermelon
,
chopped
1
medium cucumber (200 g)
,
peeled, seeded and chopped
1
large tomato (125 g)
,
seeded and chopped
¼
cup (45 g)
kalamata olives
,
pitted and halved (optional)

Tbsp
fresh mint leaves
,
thinly sliced

tsp
olive oil
,
extra virgin
2
tsp
kosher salt
1
tsp
balsamic vinegar
Ground black pepper
,
to taste
Directions
In a large bowl, combine watermelon, cucumbers and tomato.
Sprinkle with salt and gently toss to combine.
Transfer to a colander and let sit in the sink or in another bowl for a least 10 minutes to let the liquid drain.
Transfer the mixture back to a large bowl.
Add in the olives, mint, oil and balsamic vinegar.
Season with pepper to taste (generous amounts recommended). Toss to combine.
Notes
Salad will keep up to 2 days, refrigerated.
