Jicama Slaw
Jicama is naturally low in protein. It’s slightly sweet, crunchy, and perfect for a homemade slaw. This recipe is great for the whole family and will be a hit at your next barbeque!
- 2 cups (140 g) red cabbage, shredded
- 1 cup (110 g) carrots, julienned
- 1 cup (120 g) jicama, julienned
- 1 jalapeno (14 g), thinly sliced
- ½ cup (8 g) cilantro, chopped
- 2 Tbsp lime juice, fresh squeezed
- 1 tsp sugar
- ½ tsp coarse salt
In a large bowl, mix together cabbage, carrots, jicama, jalapeno, and cilantro.
Whisk together the lime juice, sugar, and salt in a small bowl.
Pour the lime juice mixture over the slaw and toss to combine.
Let stand for at least 1 hour before serving, allowing the cabbage to soften and the flavors to combine.
Stir well before serving.
