
Pancakes with Mixed Berries
Breakfast made easy (and delicious) with this simple pancake recipe. They bake up fluffy and when topped with fresh berries, it is a breakfast that cannot be beat.
Ingredients
- 1 cup (125 g) Loprofin Baking Mix
- 1½ Tbsp (20 g) butter, melted
- 2 tsp powdered sugar
- 1 tsp vanilla extract
- 4 scoops (20 g) Milupa LP-Drink, prepared (mixed with 6 fl oz or 180 mL of water)
- 2 tsp vegetable or canola oil
- ⅓ cup (50 g) mixed berries, fresh or frozen (thawed)
Directions
- Combine baking mix, butter, powdered sugar, vanilla, and prepared LP Drink (200 mL) into a bowl. Use electric mixer to blend until batter is smooth.
- Preheat a non-stick frying pan. Coat with thin layer of vegetable oil. Pour a small amount of batter in the pan.
- Cook over a moderate heat for 1 minute, until small bubbles form on the surface. Turn and cook the reverse side until golden brown.
- Repeat with the remaining batter to make about 6 pancakes.
- Top with your favorite berries. Enjoy!
